Chipotle Bacon Avocado Burger
That's right, I said it. Girls eat burgers. Not only do girls eat burgers but I'm sure there are many out there who can make a mean, juicy, delicious one, too. It is one of my favorite foods. I grew up in central NY, (God's country if you will), so I grew up in a meat and potatoes household. As I've grown older I have moved around and traveled enough to sample many different cuisines but I never stopped loving or appreciating some of the more simple American dishes. I'll always love bbq chicken, steak, mashed potatoes and, of course, cheeseburgers. There are so many variations that I really cannot choose a favorite so I'm posting this in volumes. Tonight I decided to whip up a chipotle bacon avocado burger.
Every good burger has to start with good ingredients. I've realized over the years you really need to start with 85/15 ground beef. I tend to be a pretty health-conscious person so have often bought the super lean beef- 93/7. It's just not good. It dries out easily and is inferior in flavor to the 85/15. It's also more expensive. If you're going to have a burger, you might as well do it right.
I mixed about 2 tablespoons of worcestershire (worst-esh-eshter-eshire-sh-shire? could never get that one) sauce in with the ground beef along with about a teaspoon each of garlic powder, onion powder and salt. I formed the patties and prepped the rest while the grill heated.
I fried up some bacon (any bacon of your choice) until nice and crispy. While that was frying, I made a chipotle mayo. (recipe follows)
We grilled the burgers to medium and topped with provolone cheese. I slathered the chipotle mayo on toasted potato buns, layered the burger with bacon and avocado slices and then proceeded to stuff my face like a fat kid in a candy store. It was honestly one of our better burger creations, not to brag too much. I now sit in a food coma typing on my sofa in pain, but not regretting a single bite of that spicy, smoky, salty, juicy and cheesy burger.
Chipotle Mayo
In a food processor, combine the following until well mixed:
1/2 cup light mayo
1 1/2 small chipotle peppers in adobo sauce (adjust depending on how hot you like it)
1/4 teaspoon garlic powder
1/2 teaspoon white pepper
1/4 teaspoon lemon juice
dash salt to taste

I dig meateating gals. My 8 yr old is a lumberjack when it comes to red meat. My 11 tends to not like it much. Wifey digs it. I love it.
And pork is my favorite fruit.
